- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 1 pound bok choy
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 1 cup vegetable broth
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 tablespoon soy sauce
- Sesame seeds
Lighten up dinner tonight by making something quick, easy and well… light!
This healthy dish with sweet, gingery, and tangy bok choy loaded with FunGuy mushrooms is a great accompaniment to everything from noodles or rice to chicken or pork if you need something more substantial.
It’s soy fantastic!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends. Rinse the bok choy under cool water to remove any dirt. Lay the bok choy on a cutting board and cut off the end then cut it half or quarters length wise depending on how big it is.
- Heat the oil in a large wok over medium high heat. Add in the garlic and ginger, letting it cook 1 minute. Next add in the mushrooms and sauté 1-2 minutes. Add in the bok choy and cook 1-2 more minutes.
- Pour the vegetable broth into the pan and reduce the heat to medium low, allowing it to simmer about 10 minutes, or until the bok choy is tender.
- In a small bowl, whisk together vinegar, honey, sesame oil, and soy sauce. Pour it over the bok choy and mushrooms and allow it to cook 1-2 more minutes.
- Sprinkle with sesame seed and serve immediately!
