- Ingredients:
- 8oz package of whole FunGuy sliced button mushrooms
- 3 tablespoons olive oil, divided
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- 1 cup short grain rice
- 1 ½ cups grated cooked beets
- 1/3 cup red wine
- 2 cups vegetable stock
- 2 tablespoons butter
- 1 tablespoon pine nuts
- 2 tablespoons mild feta cheese
- Salt and black pepper to taste
Stirring up a romantic dinner for your sweetheart this Valentine’s Day doesn’t have to be anxiety inducing!
This beautiful beet risotto with sautéed FunGuy mushrooms is done in less than 30 minutes, and all it takes is a bit of love and attention as it simmers. Just like your valentine should be getting from you for the rest of the day!
DIRECTIONS:
- Heat 2 tablespoons of olive oil in a heavy bottom pan over medium heat. Add in the onion and garlic and allow them to cook until the onion is translucent. Add in the oregano and cook 1 minute. Next, add in the rice and stir to coat. Pour in the wine, stirring constantly, and cook until it’s been mostly absorbed; about 3-4 minutes. Once the wine has been absorbed by the rice, add in the beets and cook another minute, stirring frequently.
- Slowly, about a soup ladle at a time, add the vegetable stock to the pan. Stir and let the rice simmer. As the liquid evaporates and starts looking dry add in a little more stock. As it cooks it will look creamy. Continue this until the rice is cooked through, stirring frequently. This should take about 15-20 minutes.
- While the risotto cooks, heat the rest of the olive oil in a pan over medium high heat. Add in the FunGuy Mushrooms and sauté 3-5 minutes or until lightly browned. Turn off the heat and cover with a lid.
- Turn off the heat under the risotto and add the butter to the pan, stir and cover with a lid to let it melt. Allow it to sit for 2-3 minutes. Stir the risotto again to make sure it’s well mixed.
- Plate the risotto and add the mushrooms, pine nuts, crumbled feta and salt and black pepper to taste. Serve immediately.
