- 2 8oz package of whole FunGuy white button mushrooms
- 2 small tomatoes
- 3 cloves of garlic, minced
- 2 green onions, sliced
- 1 green bell pepper, thinly sliced
- 1 cup olive oil
- 1 ¼ cup vinegar
- 2 tablespoon sugar
- 2 teaspoon salt
- ½ cup water
It’s mid-morning, the twenty pound turkey still isn’t fully thawed, and the guests are going to arrive in four hours. There’s only one thing to do; stuff that bird full of bread, herbs, and some mushrooms and hope for a miracle. But what about the crowd of ravenous dinner guests?!
Not to worry. The FunGuy has exactly what you need with a quick and easy recipe for Italian marinated mushrooms to use in the perfect antipasto platter. These aren’t the mushy kind from a jar or can. These mushrooms have texture and flavor. The best part? They take less than 5 minutes to prep and the rest is done in the fridge.
Simple enough that you may want to make extra just in case, you know, that turkey isn’t done until tomorrow.
DIRECTIONS:
- Clean mushrooms by brushing them with a damp cloth to remove any debris. Trim the mushroom stems and them cut into quarters. Remove the stem from the tomatoes and cut into small wedges.
- Place mushrooms, tomatoes, garlic, green onions and bell pepper into a large bowl.
- In a separate bowl, whisk together olive oil, vinegar, sugar, salt and water. Pour mixture over mushrooms and vegetables and cover with plastic wrap and allow to marinate at least 4 hours, but no longer than 24 in order to keep the crisp texture, in the refrigerator.
- Serve as part of an antipasti plater along side delicious deli meats and cheeses!
